Shrimp Quesadillas

INGREDIENTS
- QUESADILLAS
- 1 Tbsp. vegetable oil
- 8 medium size shrimps, shelled and deveined
- 1 Tbsp. lime juice
- ¼ tsp fresh ground black pepper
- Salt to taste
- 4 flour tortillas
- 1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
- PICO DE GALLO
- 2 large ripe plum tomatoes, cored, diced
- ¼ cup white onion, diced
- 1 jalapeno pepper, seeded, minced
- ¼ cup cilantro, chopped
- 2 teaspoons fresh lime juice
- Salt to taste
Preparation
- Pico de Gallo: Combine all ingredients in bowl, add salt to taste and mix well.
- Cut each shrimp into 4 pieces, place in bowl, mix with lime juice and a dash of salt and pepper.
- Place skillet over medium heat for 2 minutes. Add oil. Add shrimp and cook for about 2 minutes, stirring frequently. Remove from heat.
- Place a large skillet or griddle over medium heat for 1 minute. Warm the tortillas for 30 seconds. Flip tortilla and top with ¼ cup of Chihuahua cheese, fold tortilla in half. Turn quesadillas for even browning. Remove the shrimp from the skillet. Once the cheese has melted, remove quesadilla from skillet and add ¼ of the shrimp and pico de gallo. Repeat process with the rest of the tortillas. Enjoy!
