Grilled Hawaiian Quesadillas

INGREDIENTS
- 2 slices canned pineapple rings, well drained
- 4 oz. cooked ham off the bone, thick cut (1 taza)
- ¼ cup red onion, sliced into half-moon
- 4 (6 inch) flour tortillas
- 1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
Preparation
- Preheat a griddle with the grill marks up for 2 minutes over high heat.
- Grill the pineapple slices, ham and onions for 1 minute each side. Dice the ham, pineapple and combine with the grilled onion. Divide mixture in half and set aside.
- On the same griddle heat tortillas. Turn the heat to medium - low and heat tortillas for 15 seconds on one side, flip and add ¼ cup of cheese, half of the ham mixture, add ¼ cup of cheese, top with the other tortilla, press down, and cook for about 2 minutes until the cheese has melted and tortillas have the grilling marks. Flip occasionally so they don’t burn. Repeat with remaining ingredients. Serve and enjoy!
